Crab served in cannellonis of shellfish jelly, Sevruga caviar (Signature menu)MICHELIN STAR CHEF FRÉDÉRIC SIMONIN, chef and owner of Frédéric Simonin Restaurant in Paris, will be at VIE Hotel Bangkok to produce three romantic dinners during the St. Valentine’s period from Feb. 12-15.

Chef Frederic Simonin 1The dinners will start with an apéritif – Champagne Gosset Exellent Brut, followed by an amuse-bouche of tendre gelee de citron Crème de fenouil glacer et basilica.

Then crab served in cannellonis of shellfish jelly, Sevruga caviar, paired with Château Carignan Prima Cadillac Cotes de Bordeaux, France 2010; and raviolis foie gras in a grey shrimp bouillon flavoured with ginger and lemon-grass, with La Chapelle de St. Dominique IGP Pays de I’Herault, France 2007.

Main course features line-caught Saint Pierre melted daikôn, kombawa and galanga, garlic blossom flavoured with Sichuan, paired with Château Ferran Blanc, Pessac-Leognan, France 2010; and Wagyu Beef served with a consommé flavoured with lemon leaf, with Château Lalande-Borie, Saint-Julien, France 2009.

And fir dessert — Meringue crunchy, glazed mango, exotic fruit sorbet.

The dinner is priced at 7,000 THB for food only or 9,000 THB for food and selected wine pairing.

Centara’s CEO named Asia’s most Influential person in travel industry by Now Travel Asia

THIRAYUTH CHIRATHIVAT, CEO of Centara Hotels & Resorts, has again been recognized at Now Travel Asia Awards as Asia’s Top Influential Person in Travel Business.  The ceremony was held in Bangkok at Pathumwan Princess Hotel.

In addition to Mr Chirathivat’s award, Centara properties took the top prizes in two other important categories.

The timeless Centara Grand Beach Resort & Villas Hua Hin won the honours as Asia’s Top Heritage Hotel, while the Centara Grand West Sands Resort & Villas in Phuket was recognized as Asia’s Top Beach Hotel.

Mr Chirathivat has had a long and prestigious career in the travel industry, and, as CEO of Centara, has worked to ensure that the company keeps growing and succeeding. He has more than 25 years’ experience in the hotel management business, starting in 1990 as an F&B Coordinator at the Hyatt Central Plaza in Bangkok – now the Centara Grand at Central Plaza Ladprao. He was subsequently promoted to F&B promotions manager, and then to project development manager.  Prior to being appointed CEO of Centara Hotels & Resorts, Mr Chirathivat was senior vice president for project management, directly responsible for overseeing construction and renovation projects for the entire group of hotels.

He also holds a bachelor degree from Chulalongkorn University and Master’s in Food, Hotel and Tourism Management from the Rochester Institute of Technology in the U.S.  He also attended the Program of Management Development and Executive Education at Harvard Business School and has undertaken management programs at other well known universities and institutes.

“I am aware of the high regard in which these awards are held throughout the industry and happy to be recognized here, and particularly pleased that our hotels are gaining such a positive response from the experts at Now Travel Asia,” said Mr Chirathivat.

Now Travel Asia has come to award honours to hospitality and travel businesses in over 20 categories since they were inaugurated in 2012. Minor Hotel Group announces Flagship Anantara for Thailand

Four Seasons Bangkok - The Explorer Suite by Jim Thompson view low resMINOR HOTEL GROUP (MHG), operator of 120 hotels and resorts across Asia Pacific, the Middle East, the Indian Ocean and Africa, has announced that it is set to reflag one of its owned properties – the Four Seasons Bangkok – to its luxury Anantara brand.

Located in prestigious Rajadamri in central Bangkok’s Siam district, Anantara Siam Bangkok Hotel & Spa will join the brand’s Thailand portfolio on March 1, 2015.

Minor Hotel Group will make a significant investment to enhance the hotel.

The hotel is strategically located in the heart of central Bangkok, opposite the Royal Bangkok Sports Club, and within close proximity to the main business, nightlife and shopping districts, Lumphini Park, and many of the city’s key cultural attractions, providing the ideal base for the business or leisure travellers.

Facilities at the 354-key hotel, which has become a preferred destination for luxury travellers, include seven restaurants and bars, a spa, a gym and an outdoor swimming pool. Exclusive truffle events at Six Senses Yao Noi In February

INTERNATIONALLY RENOWNED TRUFFLE EXPERT Chef Benjamin Bruno and his partner, Katharina Minwegen, will be visiting Six Senses Yao Noi from Feb. 3 to 11.

Located in Lorgues, in the heart of the Provence, his second generation restaurant Chez Bruno is reputed to be the world’s largest consumer of truffles.

Chef Benjamin has been eating truffles since the age of 10. The Bruno family is considered to be world experts in the field of truffles.

Six Senses Yao Noi will feature Benjamin’s special and unique truffle creations in a series of dinners will be held at the resort. Guests are provided with the rare opportunity to taste not only one of the most expensive ingredients used in the kitchen but also prepared by perhaps the world’s foremost expert in the elusive and prized truffle – Benjamin Bruno.

Six Senses guests will have three choices of dinners by Chef Bruno:

Thursday, Feb. 5 – The first truffle dinner will be held at the signature restaurant, The Hilltop Reserve, with its infinity edge pool highlighting unrivaled views of Phang Nga’s limestone formations. It will be a full moon on this night, making The Hilltop an unforgettable visual experience.

Guests will dine poolside at a communal table, sharing platters of truffle-based creations. In addition, the unique “Wine Therapy” wine buffet will be offered, where guests will be able to sample a wide selection of wines of their own choosing paired with the food. Dinner starts at 7:30 p.m. Cost – 4,000 THB per person, including unlimited wine.

Saturday, Feb. 7 – The second dinner to be held takes place in the European organic cuisine restaurant The Dining Room, where a four-course truffle-based menu will be offered. Diners will be offered the choice of either paired-matched wines by the glass, or ordering from the wine menu.

Cost – 3,000 THB per person, without wines and 4,500 THB with paired wines for each course. Pre-dinner cocktail at The Chefs Table starts at 7:00 p.m. Dinner is served from 7:30 p.m.

Monday, Feb. 9 – The final dinner will be arranged by Chef Benjamin and his partner, former supermodel Katharina Minwegen, who has her own detox and organic juice business in France. Katharina will present the food and beverages she uses to maintain her health and supermodel complexion. This dinner will be presented aboard the resort’s own fishing boat, Cast Away 52. Diners will cruise through the islands at night in front of the resort for an amazing experience. Cost – 3,500 THB per person, excluding wine

Malaya Retreat starts with a nourishing body scrub inspired by famous Singaporean dessert Cendol, blending sugar, coconut milk, the leaves and juice of fragrant Pandan Fruit and a touch of Jackfruit scent.
