ONE-MICHELIN STAR Chef Julien Montbabut will be offering a special six-course dinner at La VIECreative French Cuisine at VIE Hotel Bangkok from March 23-26.

Julien is the head chef of Le Restaurant, a popular dining spot for local and international celebrities at well known L’Hotel in Paris, where he has become a master at creating incomparable juices, sauces and seasonings.

Dinner starts at 7 p.m. each day. Cost of the six-course set dinner is priced at 5,000 THB per person. The six-course set dinner with wine pairing is priced at 7,000 THB per person.

The dinner starts with a variety of snacks –tile rice and mussels with curry, tube crispy dried porcini mushrooms and parsley, orange tart and campari; followed by cucumber – horseradish emulsified milk delicate jelly, smoked eel and Norway lobster – sour cream marinated à la minute, radish.

Main dishes feature a choice of sea bass – juice of fish bones cooked on the skin, sweet & bitter salad or morel – parisian mushroom bouillon stew, jura wine sabayon or farm pigeon – devil sauce roasted on the chest, varieties of cabbage desserts include Arlette – vanilla diplomat cream baked apple puffed raisins; lemon – Italian meringue on a biscuit, creamy and zesty petit fours – truffle chocolate and coffee; marshmallow poppy and poppy sandy diamond and caramel.

Indigenous Cocktail Recipe from Naka Island Phuket

The Naka Coco Rum is Naka Island, a Luxury Collection Resort & Spa’s signature cocktail, served with a whole coconut fruit. It is a perfect mix of tropical flavors; banana and coconut juice with Chalong Bay Rum, an indigenous blend of Phuket.

One Serving

Ingredients

45ml               Chalong Bay Rum              1.5oz

15ml               Malibu                                  1/2oz

15ml               Triple sec                              1/2oz

150g.              Banana                                  1 piece

1                      Young Coconut Meat        1 unit

 

Blend all the ingredients. And arrange a coconut fruit and pour the drink into coconut. Serve chilled.

Recipe of the month: Hansar Samui’s Poon Nim Pad Pong Karee

This month’s recipe comes from Chef Stephen Dion at Hansar Resort on Koh Samui and serves one person. Poon Nim Pad Pong Karee translates in English to Crispy Soft Crab on a Yellow Curry Sauce.

Main ingredients:

1 large soft shell crab

One-half medium-sized onion, sliced

2 garlic cloves, minced

2 spring onions, cut in two-inch pieces

20g of Madras curry powder

25 ml of soya bean cooking oil

100 ml of coconut milk

25 ml of condensed milk

15 ml of fish sauce (to taste)

1 egg

Flour for dredging the soft shell

Ingredients for curry sauce: 

10g of Madras curry powder

3 g of red chilli powder (to taste)

10g of salt

100g of flour

Preparation:

Lay the soft shell crab on a tray. Dredge the the soft shell crab in the Flour mixture. Remove any excess flour .

Heat a large sauce pot enough to cover the softshell. Once the oil has 180 F, add the crab, occasionally turning it, so it cooks evenly. Then, deep fry until golden brown for three to five minutes.

Meanwhile, wok stir fry the sliced onions in the soya bean oil and add the garlic. Cook, stirring frequently, until the onions are translucent. Add a little chicken stock to prevent the onions from burning.

When the onions are ready, add in the curry powder, the coconut milk, the green onion pieces, and let simmer until desired consistency, then add the condensed milk, fish sauce and stir in one egg, stir frequently until the egg begins to cook. Remove the curry from the heat.

Set the curry sauce on a glass plate. Add the soft shell crab. Serve immediately, with steamed jasmine rice, and a small bowl of fish sauce with and a chopped Thai red and green chillies on the side.

 

 

Michelin Star Chef’s Valentine Day set dinner at VIE Bangkok

La VIE Bangkok French Cuisine

VIE HOTEL BANGKOK is planning a five-course romantic set dinner served in La VIE – Creative French Cuisine this St. Valentine’s Day, Sunday, Feb. 14.

Each specially created dish was designed by Michelin chefs, who have been featured at La VIE – Creative French Cuisine throughout the past.

Seating for this exclusive dinner is limited to a maximum of 20 couples, so advance reservations are essential. Each couple will receive a gift prepared by La VIE for the occasion.

The Romantic Set Dinner will be served at 7 p.m. Cost is 5,000 THB per couple. Wine pairing is an additional 1,500 THB per person.
