READERS OF Condé Nast Traveler (US) voted Shangri-La Hotel, Bangkok the ninth in Southern Asia on a list of “Top Hotels in Southern Asia” in the magazine’s 29th annual Readers’ Choice Awards 2016 at a high-profile presentation dinner in New York recently.

The Readers’ Choice Awards 2016 features the world’s best hotels, resorts and cruise lines as selected by subscribers. More than 300,000 travellers took part in the survey this year. By competing against a number of hoteliers in the region, the hotel achieved a score of 94.05, ranking the ninth in Southern Asia and the second in Thailand.

“The entries were from the South Asia countries and were more impressive year after year.  Shangri-La Hotel, Bangkok has outshone our peers and proven exceptional levels of professionalism and competence in our field,” said Phillip Couvaras, the hotel’s area manager and general manager.

Conde Nast Traveler (US)’s Readers’ Choice Awards are the international five-star standard of hotel ratings. The award winners’ scores are recognized as symbols of excellence throughout the global hospitality industry.

“In attaining one of these coveted awards, our hotel has proven its capability to outperform some exceedingly strong contenders within the competitive South Asia hospitality arena. With this latest five-star accolade adding into our prestigious award list, the hotel continues to gain international recognition for its perfection,” Phillip Couvaras added.

 

A new lively Italian Trattoria: Allegro at Dhara Dhevi Chiang Mai

THE DHARA DHEVI CHIANG MAI, a luxury resort in Northern Thailand, is set to open a new Italian trattoria, Allegro, in November.

As the resort’s 10th dining venue, Allegro will offer diners a taste of true Italian cuisine, focused on simple, family-style dishes, including wood-fired pizzas, hearty pastas and antipasto platters designed to be shared.

Italian aperitifs, featuring martini, gin and vermouth, along with an extensive Italian wine list, will accompany dishes while classic Italian desserts such as Tiramisu and Panna Cotta will round out a satiating meal.

The bistro-style restaurant will include a wood-fired pizza oven, cozy bar and bustling delicatessen, preparing a rich selection of premium charcuterie, olives, pickles, fresh-baked focaccia and daily specialties available within the restaurant and for takeaway.

Allegro will welcome guests not as diners but as family, complete with an inviting staff and a live cooking experience no matter where you’re seated, thanks to the restaurant’s layout and open kitchen approach.  The restaurant will be available from 11.30 a.m.– 22.30 p.m.

Zuma to Pop Up by the beach at Anantara Layan Phuket

WORLD-RENOWNED and award-winning restaurant, Zuma, will bring its contemporary Japanese cuisine to Anantara Layan Phuket resort in Thailand – the first ever Zuma Pop-Up in Asia.

This unique dining experience, running from Dec. 15 until mid-February next year over the international festive season, will offer diners a chance to enjoy dining Zuma style, with the Andaman Sea as a breathtaking backdrop.

Menu highlights will include a selection of Zuma’s favourite signature dishes such as spicy beef tenderloin with sesame, red chili & sweet soy; miso marinated black cod wrapped in hoba leaf and sliced yellowtail with chili relish, ponzu & pickled garlic.

A wide range of grilled dishes from the Japanese robata will also feature at the pop-up, alongside sushi and sashimi, all available for both Anantara guests and outside diners.

Hong Kong-based award-winning bar development manager, Arkadiusz Rybak, will be heading up the bar team and implementing Zuma’s classic cocktails, including the smoked Japanese whisky sour, zumanuka and raspberry and passionfruit martini.

Celebrating Loy Kathrong at Dhevi Dhara Chiang Mai

Recipe of the Month:Tom Kati Kha Kai from Centara LadPrao Bangkok

This month’s recipe – Tom Kati Kha Kai or chicken in coconut milk soup – comes from the chefs at Suan Bua restaurant located in Centara Grand at Central Plaza LadPrao Bangkok, which recently completed a $27 million expansion. The Thai dish is one of the most popular at the restaurant

Ingredients:  9 Ladles coconut milk  1 Stalk of thin-sliced lemon grass 15 grams of sliced galangal root  3 pcs Kaffir lime leaves  3 teaspoons of crushed bird chili (can be reduced if you don’t like spicy) 30 grams of sliced straw mushroom 7 teaspoons of fish sauce  5 teaspoons lime juice or lemon juice  1 teaspoon of sugar  50 grams of sliced chicken breast  2-3 bunches coriander leaves 1-2 pcs deep-fried dried Chili.

chicken-in-coconut-milk-soupPreparation:  Boil coconut milk in a pot, add the lemongrass, galangal, kaffir lime leaves, chili and mushrooms, boil approximately three minutes, then season with fish sauce, sugar and lime juice to your liking. Add the sliced chicken breasts and simmer to cooked, sprinkle coriander on plate and serve with steamed rice.

Chef’s Tips:

If you can’t find straw mushrooms, fresh mushrooms can be used instead. You don’t always have to use chicken. Fish would work fine, too. For vegetarians, use tofu instead of meat, and season with white soy sauce instead of fish sauce.
